- ☐ 200 g cooked jasmine rice
- ☐ Ancho crema
- ☐ Avocado salsa
- ☐ Pickled red onions
- ☐ Cucumber ribbons
- ☐ Cilantro, mint
Tools
- ☐ Grill or cast iron
- ☐ Tongs
- ☐ Carving board
- ☐ Sharp knife
Method
- Season. Salt steak heavily 40 minutes before grilling.
- Sear. Hot grill, 3 minutes per side for medium-rare. Pull at 52°C.
- Rest. Rest 5 minutes minimum on a rack — never on the cutting board.
- Slice. Slice against the grain, 5 mm thick, on a bias.
- Build. Hot rice base. Fan steak. Crema, salsa, pickles, herbs.
- Send. Lime on the side. Box closes only after photo.
