TACO — Al Pastor

Mise en Place — Ingredients
- ☐ 180 g pork shoulder, thin sliced
- ☐ Adobo (guajillo, achiote, vinegar, garlic)
- ☐ Pineapple, 2 small wedges
- ☐ Salsa verde
- ☐ Avocado salsa
- ☐ 2 corn tortillas, 6"
Tools
- ☐ Grill or plancha
- ☐ Tongs
- ☐ Microplane
- ☐ Squeeze bottles
Method
- Marinate. Coat pork in adobo. Minimum 4 hours, ideally 24.
- Grill. Hard sear on plancha for color. Char marks build flavor.
- Char. Grill pineapple wedges until edges blacken. Dice fine.
- Chop. Cross-chop pork on board to get crispy edges in every bite.
- Build. Warm tortilla. Pork. Salsa verde. Avocado salsa. Pineapple.
- Send. Two tacos, lime, cilantro. Plate immediately.
